Guaca Mole Cocina Mexicana

Guaca Mole, 9921 Ormsby Station Road, will open soon with “authentic, modern” Mexican fare.

“I opened Mojito and Havana Rumba, and I always wanted to do Mexican food,” says owner Fernando Martinez. “I always wondered why nobody was doing authentic Mexican food, and that’s what I’m trying to do … it’s authentic, but I’m going to present it in a modern way, from the plates I’ll use to the ingredients,.” he says.

“I’m going to make everything homemade — pickled jalapenos and cabbage, my own corn tortillas … everything you’d normally get at a Mexican restaurant but homemade.” Martinez says he’ll put a modern twist on the menu with touches like a smoked pineapple salsa.

Martinez says this will not be the typical “Tex Mex” style diners may be used to at Mexican restaurants. “Even with the decoration, you go to a Mexican restaurant and they all look similar,” he says. “We’re trying to do something completely different. We went to Mexico to get all the decorations … and I took some cooking classes.”

Cocktails will feature a twist as well. “My wife, she’s front of the house, and she’s been a bartender for a long time,” Martinez says. “She’s creating really cool margaritas, one with pink peppercorn salt, another with oregano salt ... they all will have different flavor salts. Even the margaritas, we’re going to use fresh ingredients … spicy passionfruit, watermelon .. fresh-squeezed lime.”

Martinez expects to open by the beginning of April, if not sooner.
